Quinoa, Broccoli & Chicken Salad

SERVES 4

Ingredients

400g Organic chicken breast sliced diagonally into pieces

1 cup of Quinoa

1 Whole broccoli, cut into bite sized pieces

1/2 cup of red pepper, diced

40g of pine nuts

1 tablespoon of coconut oil

1 fresh lime

Method

Rinse the quinoa thoroughly

Bring 2 cups of water and the quinoa to the boil in a small saucepan, cover and simmer for 10 minutes or until the water has been absorbed

In a large non-stick frying pan, on medium heat, cook the chicken until almost browned

Add the broccoli and pepper to the pan and cook until the broccoli is tender

Combine the quinoa, chicken and veg in a large bowl

Squeeze the lime juice over the salad, fold in the pine nuts and serve.

Enjoy!!!

  1. That looks gorgeous!! I made some (not so similar) last night but with Cauliflower and I’m a sucker for cooking my quinoa in a bit of stock…it makes it so yummy! xx
